Baking . . .

I did some baking while I was on vacation.

This pie was so easy and turned out so delicious !

Recipe below so I don't loose it

1 ready-to-use refrigerated pie crust (1/2 of 14.1-oz. pkg.)

1 pkg.  (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding

½ tsp.  ground cinnamon

2 Granny Smith apples, chopped

1 McIntosh apple, chopped

½ cup  dried cranberries

½ cup  chopped PLANTERS Pecans

3 Tbsp.  water, divided

1 egg

2 Tbsp.  coarse sugar

           HEAT oven to 400ºF.

UNROLL pie crust onto parchment-covered baking sheet; roll to 12-inch circle.

MIX dry pudding mix and cinnamon in large bowl. Add fruit, nuts and 2 Tbsp. water; toss to evenly coat. Spoon onto center of crust; fold edge of pastry over fruit mixture. (Fruit in center will remain uncovered.) Beat egg and remaining water with fork until blended; brush onto crust. (Discard any remaining egg wash.) Sprinkle crust with sugar.

BAKE 30 to 35 min. or until fruit is tender and crust is golden brown. Cool completely.

Shopping and Anniversary Celebration

Today I was up early to do laundry
Oh boy those 6am alarms go off early.

They just opened a Dunkin Donuts right
next to our Laundromat !  Oh the JOY!
Hubby and I grabbed a quick breakfast !

After chores I headed out with my Aunt Rose and good
friend Cindy.  We headed to the Meadowlands Flea Market.

The flea market is in the same location as the stadium
where the Giants and Jets play.  See the stadium in the back.

My hubby has been here before, but I hadn't.  We walked
my legs off. Enjoyed a hot dog and ice cream.  I know
health food hah   Taking a break for my birthday-anniversary
weekend.  Monday back on the horse.

I got myself a Cowboys key. I also picked up a
Fred Flintstone for hubby.  He loved it.

I also stumbled across a vendor selling
Temptations from QVC.
I collect the red Floral Lace pattern.

I found these bowls 3 pcs set
for $ 15.00 ~ such a deal.

Came home and it was almost time
to go out for our anniversary dinner.
 7 years on Monday!

I wanted to go to Point Pleasant and eat
by the water it was such a glorious warm day.
Almost 70 degrees on Oct 25 !

I selected Jack Baker's Wharfside restaurant.

It was so nice sitting by the water watching
the different ships sail by.

 The food was delicious.

Corn Fritters

Lobster Bisque

I ordered Shrimp, Scallops and Veggies in a white wine sauce.
It was so good!

Here's to another 7 years !

 My vows  . . .

Exercise Taking Me To Nice Places

My new exercise efforts are
taking me to some nice local places.

Hubby and I walked on the
Asbury Park Boardwalk

This is the famous Convention Center

The beach and ocean

I walked at our local track.  The sun was setting and it
was really so pretty.

Then my Aunt Rose and I walked over the Rumson-Fair Haven
Bridge.  It was cold and windy but beautiful.

Fall is the best time to walk.  Hoping to keep it up
all Winter long.  Much more fun then riding the
stationary bike at home : )

25 years . . .

Celebrated 25 years at my job this week.
Customer Service Supervisor.

Co-workers gave me these beautiful flowers and balloons.
They also had a nice deli lunch for me.

The company allows you to select from a list of gifts.
I chose a Kindle.  I enjoy reading so I figured I would
get a lot of use out of this.

Counting my blessings

Thankful for kind thoughtful co-workers

The Lord's provision of a good job all these years

And the abilities to perform my job and good health !
